Robert Cervantes grew up near Western and Berteau, then spent his adult life traveling — opening a restaurant in Singapore, teaching yoga in Hong Kong and Belgium — before a visit to a Belgian natural-wine bar rekindled his love of wine and brought him home to open Apero in North Center in 2023, in a building he and his family bought outright. "Apero" is the French word for pre-dinner drinks with friends, and the wine list leans hard into natural, biodynamic, and orange wine — Cervantes wants this to be the city's number-one destination for it. $5 wells and drafts at happy hour, on a wine list built by someone who actually chased this obsession around the world first.
