The edible helium balloon is the dish everyone already knows about before they arrive — grape or apple taffy, actual helium inside, eaten whole — but it sits inside a much longer tasting menu built around ingredients doing things you don't expect: a black truffle explosion, dessert plated directly onto the table and eaten off it like a canvas. Achatz held three Michelin stars here from 2011 straight through 2024, longer than almost any other kitchen in the country, before a 2025 inspection dropped Alinea to two.
Achatz addressed the demotion directly rather than pretend it didn't happen, which tracks with how the whole place runs — confident enough in what it's doing to not need to oversell it. Expect two to three hours at the table depending on which of the three formats you book, and reserve well ahead.
